Wedding Cake Cupcakes Recipe!

Happy Tuesday Friends,

A lot of people ask me for my cupcake recipes, especially the ones I made as my wedding favors. So for this week’s post I’m taking you all back to my wedding day and everyone’s favorite cupcake recipe.

Some people are still surprised to find out, that I made all 200 and some favors myself, but you really can’t buy these cupcakes at a store. The secret to this recipe is using cake mix (don’t worry, it’s still a homemade recipe) and adding a few other key ingredients. Maybe one day I’ll eliminate the cake mix and come up with a new recipe, but I don’t want to mess with it just yet. You should be able to find this recipe online fairly easy, it’s called “Wedding Cake Cupckes”, how fitting right?

For frosting I tend to do half buttercream/half cream cheese type of recipe, but for my wedding favors I used Cream Cheese frosting, which is by far everyone’s favorite.

Wedding Cake Cupcakes

(makes about 36)

1 (18.25 ounce) box white mix (I like to use Duncan Hines “Moist” White Cake)

1 cup all-purpose flour

1 cup granulated white sugar

3/4 teaspoon salt

1 1/3 cups water

2 tablespoons vegetable oil or canola oil

1 teaspoon vanilla extract

1 cup sour cream

4 large egg whites

Preheat oven to 325*. Place cupcake liners in cupcake pan.

In a large bowl, whisk together cake mix, flour, sugar and salt. Add remaining ingredients and beat with hand mixer for 2 minutes, or until well blended.

Fill prepared cupcake tins about 3/4 full. Bake about 20 minutes or until a toothpick inserted in the center comes out clean.

Cool completely then frost.

Cream Cheese Frosting

2 packages cream cheese (room temp)

1 stick (1/2 cup) butter (softened)

2 cups powdered sugar

1 teaspoon vanilla

Mix cream cheese and butter at medium speed until combined. Add powdered sugar (mixing in 1 cup at a time works best) and vanilla and beat on high speed until smooth and no lumps remain (I manage to always get bits of cream cheese stuck in my frosting bag).

Add food coloring if desired. Keep refrigerated until ready to use.

Hope you guys liked this post, let me know in the comments!

❤ Julie
